Warm spelt breakfast with fruits and nuts

Ingredients
for 2 portions

60 g spelt, coarsely ground
350 ml water
30 g dried fruits (e.g. raisins, cranberries, apricots, plums or figs)
Cinnamon
1 tsp. lemon juice
1 Tbsp. chopped nuts  

Extras: 400 g fresh fruits and berries (e.g. apples, pears, raspberries, blueberries, or pineapple)

 
Method

Mix spelt with 250 ml of cold water. Cover and let soak overnight. In a second bowl, mix dried fruit with 250 ml of cold water. Cover and let soak overnight.

In the morning, transfer spelt and its soaking water to a pan, and add a pinch of cinnamon. While stirring, bring to a boil, let simmer. Add water if necessary. Mix in lemon juice. Dish up spelt and sprinkle with dried fruits and nuts. Add fresh fruits and berries just before eating.

Creamy alternative
Mix 60 g of ground oats and ¼ tsp. of cinnamon in 350 ml of boiling water; briefly let simmer while stirring constantly. Add soaked dried fruits and hazelnuts.
